Assistant Culinary Innovation Manager

This role will support the development of gold standard bakery and donut products. As an assistant manager you will support aspects of ideation, conceptualization and prototype development for innovation and renovation projects. In addition, you will be responsible for managing several ongoing product development initiatives independently. This role supports Innovation by researching the bakery market space and staying current on trends while being able to effectively communicate them to your team, manager, and innovation partners.
You will work closely with many partners, including cross-functional team members and suppliers to support in the development of and sourcing of ingredients.
In addition to development, you will assist in the execution of product reviews, consumer sensory panels, and help maintain lab space with product ordering and organization.
Duties and Responsibilities
- Assists supervisor in the development of gold standard innovative bakery products that feed the Innovation pipeline
- Actively work on multiple projects at any given time that you will be responsible for leading through with support from management
- Leverages culinary skills and or scientific knowledge to develop viable concept development and renovation solutions
- Works with cross-functional partners to understand the Innovation to market process; including Commercialization, QA, Operations and Supply Chain
- Presents products cross functionally to XF director level leadership for alignment and support of project kickoffs
- Participate in team activities including culinary innovation sessions, competitive market tours, brainstorm sessions, product reviews, tastings, competitive analysis and leadership events.
- Leads the execution of consumer testing, internal and external
- Support team in the preparation of product for reviews with Marketing, Leadership, Franchisee Committees and Field Teams.
- Actively innovate by researching and following trends within the bakery industry, incorporating into Dunkin strategy and participation in Culinary Innovation sessions
- Maintain proper lab conditions and equipment maintenance. Maintain proper documentation on all work including product formulations / development, supplier documents and day to day lab functions.
- Manage inventory of key ingredients and supplies for the lab.
EDUCATION QUALIFICATIONS
Min/Preferred
- Associates/Bachelors Culinary Arts or Food Science / related field
EXPERIENCE QUALIFICATION
Minimum Years of Experience
- 3 Years Experience in Food / Beverage Production or Laboratory Setting
REQUIRED KNOWLEDGE, SKILLS or ABILITIES
- Culinary and/or Food Science and general kitchen knowledge
- Strong attention to detail, be meticulous in their work.
- Strong verbal and written communication skills
- Able to prioritize multiple tasks and meet multiple deadlines throughout the day.
- Computer/Documentation skills
Physical Demands/Working Conditions:
- Frequent heavy lifting up to 30-50 lbs. Physical labor of food processing: pushing, pulling and lifting of food-handling materials.
- Constant work in food processing environment.
- Occasional irregular work hours: night production work may be required.
- Leg, arm and hand/finger actions in performing bench top work.
- Extended periods of standing to perform some job parts.
- Close visual work
- Temperature extremes: inventory management and shipping/receiving in walk-in refrigerators/freezers. Higher temperature conditions in bakery environments. Use of ovens and fryers.
- Extended hours: Long hours and/or overnights may be required for some product preparations and events.
- Exposure to allergens and all food allergens.
- Exposure to chemicals
